Cress Restaurant has had an active and progressive food waste program since 2013. Our partnership with a local farmer has been highlighted in multiple fora, including 2017 Grist 50, The Orlando Sentinel, and by the James Beard Foundation. Cress Restaurant has prepared and sold a number of food waste based sauces and condiments. Chef Pulapaka routinely creates components for dishes on the Cress menu by repurposing food scraps.
